What is the core difference between the Fried and Non-Fried noodle line?
The main difference lies in the dehydration process (Step 6).
Fried Line: Uses a fryer at 140-160°C. The noodles are dehydrated by oil, creating a porous structure. The texture is elastic, and rehydration takes about 3 minutes.
Non-Fried (Air Dried) Line: Uses a hot air drying tunnel (70-90°C). It removes moisture without oil. The texture is smoother (like fresh noodles), fat-free, but takes longer to rehydrate (4-5 minutes).
Can one production line produce both Bag Noodles and Cup Noodles?
Generally, we recommend dedicated lines for maximum efficiency. However, the front-end process (Mixing to Steaming) is identical.
Loyal Machinery can design a split-flow line where the dough sheet is diverted to either a “Folder & Cutter” system (for bags) or a “Cutter & Drop” system (for cups). Note that the fryer baskets must also be changed, which requires downtime.
How does your machine control the oil content in noodles?
We use a dual approach to keep oil content low (standard 18-20%):
1. Temperature Control: PID system ensures stable oil temperature, preventing oil soaking caused by temp drops.
2. Air Knife System: Upon exiting the fryer, strong air knives blow off excess surface oil from the noodle block before it cools down.
Do you provide the noodle recipe and seasoning formula?
Yes. As part of our Turnkey Solution, Loyal’s food lab engineers will provide starter recipes for the dough (flour, alkali, water ratio) and can connect you with seasoning suppliers. We help you adjust the formula during installation to match local flour characteristics.
What is the manufacturing lead time for a full line?
For a standard capacity line (e.g., 60,000 bags/shift), the manufacturing time is typically 60-75 days after finalizing the layout drawing. Customized high-capacity lines (200,000+ bags) may take 90 days.
