What is the difference between Short-cut and Long-cut pasta lines?
The main difference lies in the drying system. Short-cut pasta (Penne, Fusilli) requires a Vibration Pre-dryer to separate pieces, followed by a Mesh Belt Dryer. Long-cut pasta (Spaghetti) requires a Rack Drying System where noodles hang vertically to maintain straightness. They usually require different downstream equipment.
Can this machine produce Gluten-Free pasta?
Yes. Our extruders are versatile. By adjusting the screw configuration (shear force) and barrel temperature, you can process gluten-free materials like rice flour, corn flour, and buckwheat. We can provide specific screw designs for gluten-free recipes.
